I use these green onions in a homemade salsa that I sell at our local Farmers Market. I package and sell the dry ingredients for my Mother's authentic salsa recipe and needed a substitute for fresh green onion. These air-dryer onions give the salsa substance that the fresh onion didn't. I am sold on these onions and have no qualms using them over fresh green onions. Thank you NorthBay.

I always forget to buy these at the store when I need them. Now I won't have that problem anymore. Nor will I have any green onions go to waste in the fridge. These are really tasty and so versatile that you could use them in almost any dish. They work great in veggie dips! I love having these ready when I need them. I will be using these a lot!

GREAT in soups, salsas, salad dressings and so handy and ready to use. Surprisingly these dried green onions taste so fresh. Put some in your chicken noodle soup and it adds not only flavor but lovely color. You will LOVE these and no chopping, cleaning or worry about spoilage.

I never seem to have scallions on hand consistently as much as I'd like to use them. Don't want to run to the store just for that, so I will typically just go without. But they add such a nice finishing touch to so many dishes. I've tried the expensive versions sold in tiny spice bottles, but this dried onion is so much better. You can add them to the dish dry, but I prefer to rehydrate them for a few minutes in cold water first. Each method gives you a somewhat different taste result, so it depends on what you want for a particular dish. They taste great, without any bitterness, and also when rehydrated have the lovely green color that makes scallions such a wonderful finishing step to a plate.

I've tried dried white onion from several other sources and these onions taste best. Oh, and the leeks are good too.

I run out of fresh green onions too often. These, however, fill the spot in any meal. Stir them in, sprinkle them on top, or munch from the bag. They smell heavenly, and taste just like onions. Wonderful invention!

Went sailing in the West Indies and normally buy onions at every stop. This time took air dried green onions and chopped onions. AMAZING! Work great. I made a marinade using olive oil,green onions,salt,pepper,garlic. Chicken was great! Will definitely keep ordering.

I can not rave enough about the quality and taste of ALL of your food products. You can eat the air dried minced green onion right out of the bag! I took a large pinch to try before adding some to my chile, WOW what a surprise! The flavor is so sweet and delicate, better than if I chopped it from fresh. I add a couple of teaspoons on top of my salads for a subtle onion flavor, simply delicious! This product is a wonderful healthy (high in vitamin C), very tasty and colorful garnish for any food dish that you can prepare! I can not wait to add to my potato pancakes! No mess, no fuss, saves money and task of chopping. This time saving veggie is a must have to use everyday and as a vital part of your food storage pantry.

Easy to Prepare
- Add dried onions while cooking soups, sauces, casseroles and other foods with sufficient liquid content.
Yield — 1 oz equals about 3/4 cup dry. Generally, air dried vegetables double in volume when hydrated.
Rehydration Ratio — 1 lb of air dried minced green onion, once rehydrated, equals approximately 4 lbs of fresh prepared minced green onion.
Storage — Best if used within 18 months. Store tightly sealed in a dry location away from sunlight.
