    Delicious limey flavor
    I love the "whole lime" taste of this powder - both the acid and the bitter! Mixed with water, itʻs my go-to drink, and even feels a bit like youʻre having a cocktail. It doesnʻt fully dissolve, but I donʻt mind - you can just keep adding water and itʻs almost like brewing tea. I also like adding it to cooking when you want some acid, but no more liquid.

    Very Bitter!
    I tried this every way I could think of and it is very, very bitter. Though I love many of the berry powders, this, like the lemon, went into the trash.

    Bitter!
    Not sure how the other reviewers love this so much (maybe massively diluted), but it's really bitter! Since bitter is usually balanced out by fat and by sugar, I've tried adding this to guacamole (fat) and cookies (sugar as well as being cooking) but bitter on both counts. The only place this has helped was in brightening up some home made bitters.

    Very good lime powder
    This dissolves realyl well in water and only a hint of the taste of the peel itself. As the freeze dried process reduces the citric acid content by half, adding extra citric acid and lime essential oil makes it as close to fresh tasting as possible. This is the best citrus powder I've tried by far!

    Mexican flavor in a jar
    Since acidic foods don't last as long as low acid foods, having a freeze dried powder is a great way around that issue, as the low moisture content curbs the decomposing action of the acid. I use this a teaspoon at a time to add flavor to Mexican dishes, such as salsa, southwestern chili, or to make cilantro lime rice. I haven't had the chance to try in a dessert yet, but key lime pie or lime cookies with powdered sugar coating come to mind. This is a tasty product and keeps nicely in a canning jar. The 13oz bag fills just over half of a half-gallon canning jar, or just over a 1 quart jar.
