We also followed the advice of another review, removed 1/3 of the beans and mashed them and returned them with sour cream. Ours came out a bit thick so we put it over rice. One of the best beans and rice dishes we have ever made. It has now become a request in our home. Love this type food that we can ignore in the pantry but when we have time and with a few extras makes a fantastic meal.

Review by: cwhiteMy husband says I've "hit it"My husband is sometimes difficult to cook for and so while he liked the soup plain he encouraged me to see what I could do with it. Well I made it late last week and he says I've finally "hit it." Used 6 cups of chicken broth to cook the soup. Cooked it for about 3 hours on a low simmer and then took about 1/3 of the beans out and smashed them. Then returned them to the pot and added maybe 3/4 cup of sour cream. Served it hot with cornbread. The kid even loved it! Thank you NBT for such healthy and versatile products.

Just before it was done, I added some leftover cooked rice, to complete the protein with the beans. Nothing else added, and the soup is AWESOME!

Review by: B. Gaudin in Prairieville, LAREALLY REALLY GOOD!!! NOT OVERLY SPICY!I made this soup in the crockpot w/2 cups mix, 7 cups chicken stock, 2 chicken breasts (lighty grilled) cubed, 1 envelope HVR dry dressing mix and salt to taste. My family loved it!! Very hearty, and filling soup.

If you want, add some cilantro and lime juice, or adjust chunkiness by using more or less water.

- This is a spicy soup due to natural seasonings: jalapeno and green chili peppers.

Easy to Prepare — vegetarian as is — modify as you wish.
Basic recipe
- Use 1 part soup mix and 5 parts water or chicken stock.
- Bring to a boil for 5 minutes.
- Then simmer strongly for 90-120 minutes, or until beans are tender, with lid on.
- Add water if necessary.
Ideas
- Season with lime juice and chopped fresh cilantro.
- Often made by adding several teaspoons of butter or lightly fried, boneless chicken thighs or breasts.
- To make a thick mixture for tacos, steam off excess water.
Freezes well — Prepared soup may be frozen and reheated.
Yield — One cup of dry soup mix weighs 0.4 lb and makes 7 cups of soup when hydrated.
Storage — Best if used within 12 months. Store tightly sealed in a dry location away from sunlight.
