What is freeze dried?

Freeze dried food is placed in a refrigerated vacuum, where, without thawing, it is dehydrated — ice disappears in the form of escaping water vapor. Cell structure remains intact, which results in excellent retention of flavor, color, shape, and nutritional value. Our freeze dried food is ready to eat as is, can be hydrated quickly, or used in making drinks (smoothies or beer) or cooked applications (confectionery or omelets). Please note we do not offer fruit which is simply "dried," but not "freeze dried." Fruit which is dried but not freeze dried tends to cost less, has a higher moisture content, and usually contains a substantial amount of added sweetener as a preservative.
