Wonderful in my cooking for low sugarReview by MarciaI have found these little crunchy beauties to taste great and sweet. I have type 2 and I cook a lot from scratch. I have found that anything that you might add a little amount of sugar to these substitute extremely well. Two main dishes I have used these in is spaghetti sauce and vegetable soup when using a good amount of tomatoes. These work wonders for cutting the acid of the tomatoes and I'm not adding sugar to my sauces anymore.
I've made some very tasty Tziki sauce with them, so much cucumber flavor that we love.
I also use them in what I call my 'salad crunch mix'. Freeze dried cucumber, red and green bell pepper, whole peas, celery and freeze dried mushrooms with a little extra vinegar. What an explosion of flavor while adding the crunch factor to my leafy salads, macaroni salads and more.

Surprisingly good!Review by WendyWhile I love cucumbers, I was not sure how you'd freeze dry them while retaining flavor. I was curious because I've not seen them offered elsewhere in this form, so I decided to try them despite no prior ratings.
Let me be the first to say that these are great! I often need them for recipes throughout the year. Unfortunately, they often spoil before I get to use all of them. Freeze-dried to the rescue!
These are sweet and crunchy, and yes, they definitely taste like cucumbers! The peel is left on, so you will have flavor from that, but I don't mind the fiber. I've been using them in various cucumber dressings and sauces (they soften up nicely), but I also plan to try them in salads. If I could change one thing, it would be size of the dice (tiny!). I'd love to see bigger chunks for use in applications such as a salad vegetable or for snacking. I've got some wonderful recipes for cucumber salads that would be great to try, but these pieces are just too small. The size isn't really conducive for snacking unless you plan to use a spoon.
Bottom line, don't be afraid to try these. They will work wonderfully in recipes. But I'd love to see these in a larger size and think they would sell even better as they would have more applications that you could use them in. Am back today for more, so they are being used in my kitchen.
Easy to Prepare
- Add dry for a crunchy effect in salads, and while serving, cooked rice, cooked pasta, and soups.
- Add dry during the last 5-10 minutes of cooking soups and stews that have sufficient amounts of broth.
- For most other applications, hydrate by soaking for 5-10 minutes in a generous amount of cold or hot water (hot water works slightly better). Then drain.
Yield — 1 oz of this freeze dried cucumber equals about 1 cup dry with very low moisture content.
Storage — Best if used within 24 months of purchase. Store tightly sealed while minimizing exposure to heat and humidity.
