Really enjoyed this pasta soup. We added cubes of cooked beef and stewed tomatoes. The kids even eat the vegetables! And it makes for a great soup the next day .

I made this soup for years when my local food co-op carried it. When they stop, we missed it so much that I hit the internet to track it down and I found this site. I have continued to order it and it is the staple of our winter diet. My kids like the letters, it tastes great, and you can add lots of different things if you want to change it up a bit. This is the only soup with whole wheat pasta, which I really appreciate.

This wheat pasta veggie soup is my favorite! I like to cook it in chicken stock and add turkey, turmeric and curry paste for a little spicy punch. In my busy life, it's nice to find something easy to make, is a treat to eat, and is good for me all in one!

Easy to Prepare — vegetarian as is, modify as you wish.
Basic recipe
- Use 1 part soup mix and 8 parts boiling water.
- Stir for a few minutes.
- Cover and then simmer 45-60 minutes.
- Add water as necessary.
Ideas
- Add tomato paste or canned Italian seasoned tomatoes for a traditional soup.
- Experiment with seasonings such and try adding diced beef, chicken, ham, or lamb.
Yield — One cup of dry soup mix weighs about 1/3 pound and makes about 8 cups of soup.
Storage — Best if used within 6 months of purchase. Store tightly sealed in a dry location away from sunlight.
